Finally rendered out several pounds of chicken skin that'd been piling up in a freezer bag. Result (as usual): large bowl of toasty golden-brown schmaltz and somewhat smaller bowl of crispy "chicken rinds" (aka "gribenes", though I still have an illogical delight in the alternate spelling "gribnitz").
Have already eaten about half of the latter.
Gah.
I'm rather surprised that the cats don't seem to have any interest in either product, considering how intent they were on supervising the initial handling of the chicken skin. Just as well, really, or I'd probably be dealing with at least one cat scalded by boiling schmaltz.
At least this time my digestion seems to've been saved by a ginger/honey/lime concoction made from the leftover stub of ginger root from the recipe for which I peeled off the latest batch of chicken skin -> 6 lbs of chicken parts now marinating in the fridge for Butter Chicken tmw-- this'll be the first time I'll've tried doing both the marinade and the sauce, since most of the time I've only made the sauce to put leftover cooked chicken/turkey into. I kinda messed up the pre-marinade step, though-- forgot about the initial slurry of salt and red pepper flakes in lemon juice, and ended up chucking those into the main marinade as an afterthought.
The schmaltz is probably destined for soap again; iirc I have at least one other cache of rendered fat in the fridge, as well as various other small collections of fat in the freezer to be combined for meltdown and brine-wash (the latter, as a second step, helps get residual water out of the fat layer). OTOH I've got several pounds of soap already piled up in the house-- probably time to shred some of it into laundry flakes. I don't think it'd be worth trying to get rid of it on eBay, esp. considering probable shipping rates and my utter lack of interest in foofing around with rebatching colors/scents into the stuff.
Meanwhile, will have to get more dinner ingredients from Safeway tmw morning-- it sounds as if it's fairly easy to make fresh paneer from milk and a bit of acid (citrus juice, buttermilk, or yogurt), but I'll have to set it up several hours ahead of time to let extra liquid drain out, and get some peas to cook with it when done. Already have plans to put the whey into chicken/potato soup (still have chicken stock in fridge).
